How to build the ultimate BlueSCSI Compact Mac images - complete with games and apps?

Have you tried out Macpack at all yet? its pretty much optimized for the Mac SE and has hundreds, if not thousands of games in it and also a pretty decent array of apps in it too. Its linked over on the BlueSCSI docs: https://bluescsi.com/docs/BlueSCSI-Images#Macintosh

BlueSCSI in Quadra annihilating system folder, Daynaport

I've had a similar issue with BlueSCSI on my Quadra 700. If I copy lots of files into disk while booted into System 7 it'll eventually completely trash the entire SD card. The same thing happens if I do an os install too.

Disk Jockey Jr 2.0.0, now on Linux!

No idea sorry. Its how the drive came from whoever I bought it from. Looking at the contents of the drive and the version of the OS the drive appears as-is from whenever if it was first built years ago.

Apple Keyboard M0116 - Complete Teardown Details

I don't have a guide nor have to pulled this specific keyboard apart before but I have built and worked on similarly constructed keyboards before. I'd say that firstly the switches will need to be desoldered. Usually either with (in order of preference) a desoldering gun, solder sucker, or...
