You just reminded me of something my brother makes. Chili, but topped with mashed potato and cheese. Mexican cottage pie, basically.

It was a store bought unsmoked gammon joint - boiled with bayleaf and peppercorns to reduce the salt content, then dried, skin/fat sliced, oiled and salted, cooked at 220*c for 50 mins. Boiling it first stops it drying out in the oven, too.

The rice really is king, the salt and lemon juice help keep the rice grains from clumping together - the turmeric and the salt add some flavour to it but don't overpower the rest of the meal. Use that method on the stove, and i guarantee it's good rice, every time. 2 cups basmati to 2.5 cups...

Funny thing is, all this took about 45 minutes to make. The rice taking the longest (wash til starch cleaned off, soak for 10 minutes, then drain for 10 minutes, sautée it in ghee, add turmeric, lemon juice, salt, then once toasted, then add the water, bring to a boil, put the lid on, turn heat...
