This wasn't made by me, but by my wife, @boopbox123

So, it's a gluten free sponge, using xanthan gum, cut into squares - each square has the centre cut out, filled with seedless raspberry jam and then the centre put back in place, vanilla butter cream on top, and decorated with unicorn sprinkles and jelly beans/jelly tots (y'know, in case there wasn't enough sugar involved...!)

I bet you all want one, now... 😜

Hello!! My first time posting on Tinker different !

Gluten free sponge
225g gf self raising flour
225g golden caster sugar
225g butter (not margarine)
4 eggs
1/4 tsp Vanilla pod paste
1 tsp baking powder
1/4 tsp xantham gum

Preheat fan oven to 160 degrees Celsius
Grease and line x 2 trays (roughly, 8ā€ x 12ā€)

1. Mix sugar and soft butter , add eggs and vanilla,

2. Slowly add sieved flour, baking powder and xantham gum , until well combined
(Xantham gum can make the cake batter very stiff - don’t be alarmed if it really sticks to the mixer !)

3. Split evenly between 2 trays
4. In oven for 25- 30mins
5. Cool for 10 mins
6. Apply your jam, butter cream and sprinkles as desired
