Some info that I've accumulated that might be relevant to this thread and awesome guide. I socketed most of the chips on a good SE/30 and checked what happened to the boot process when each was removed. These are the results.
UL11 / ADB- chime, hangs at 50% gray (square corners), no cursor
UK11 / VIA1- simasima with additional box behind, long sad chime, cannot see serial diagnostic mode with programmer button
UK12 / VIA2- simasima with additional box behind, long sad chime, cannot see serial diagnostic mode with programmer button
UJ11 / SWIM- no chime. can hit programmer button to get sad chime and enter diagnostic mode
UG12 / 8530- POST OK, hangs during boot, mouse continues to work
UI12 / SCSI- chime, never shows flashing ? floppy, mouse still works

Also, I created some resources for looking for broken traces. Resistance to ground is a quick and dirty way to look for them, so I created a table with many locations on the SE/30 (there are a couple tabs with additional info as well):
