Today’s culinary adventure visits a childhood favorite of mine “chili Mac”. We’ll eat this first half of this week but got the “chili” component done - always tastes better a day or two later, hence the wait.

This will go over a homemade Mac n cheese (I usually do a cheddar and Gouda mornay for the Mac n cheese) and then baked for about 30 minutes or so until everything is bubbly and delicious. Feel free to ignore my wife's goofey Xmas gingerbread spat. All of my red handled high-heat spats were in the dishwasher lol.

That’s awesome. I love it :) This weeks meal plan includes sloppy Joes but through the same mash-up lense as your brother. I use Mexican pork chorizo and ground beef and build a red chile adobo sauce around all of it & call it

Sloppy Jose’s

They get built on toasted burger buns and I top mine with pickled onions, shredded cabbage and actual pickle chips but the kiddos all do cheddar cheese.

Anyhow, it’s an easy weeknight meal. I am totally stealing your brothers idea. Maybe I’ll do something like frito pie filling and top it with a cheddar jalapeño mash and broiled the top a bit .. yanno make it pretty lol 😆 I could absolutely get down on some of that.

I won't add much of myself, but I admit that I didn't cook it today.
I'm not as good a cook as many of you. I'm quite slow and lazy. 🦥

I prefer to rub the tomatoes on a grater instead of a blender, so the color is preserved much better. You can also add a tomato juice to make the taste more "tomato". I don't like canned tomatoes in my own juice from the store, so I don't use them.
Fry the meadows, add tomatoes and spices. For the best taste, I add a olive oil and pepper and crushed garlic. Stew for 10-15 minutes to make a delicious sauce.

Eggplants should be salted and squeezed from excess moisture, then fried until golden brown.
When everything is ready in the form, you need to collect 3-4 "floors":
Eggplant
Tomatoes/sauce
Mozzarella
Parmesan

Then send to the oven for 15-20 minutes at 190 ℃.

@Certificate of Excellence, I'll have to do something similar to yours “chili Mac”. 🧑‍🍳

And this is what I cooked yesterday.

1. Pasta
2. Feta cheese
3. Zucchini
4. Different spices
5. Turkey or chicken
6. Olive oil

This is a rather lazy recipe, although it's a waste of time. It turns out delicious.

I had a boneless turkey thigh, rubbed it with a marinade of olive oil, spices for poultry, smoked paprika and curry, left it for an hour at room temperature to warm the meat.

Then fry in a very hot frying pan for 2-3 minutes, no more, until a crust appears. Then we put it in a mold and foil, I have 2 layers. Keep in the oven for 45-50 minutes at 190 ℃.

Cut the zucchini into quarters, squeeze or finely chop a couple of slices of garlic, add olive oil and spices (I have oregano). We make room for the cheese in the middle. Put it in the oven for 20 minutes.

Cook pasta for 1 minute less than usual.
Here you need to calculate the time to get zucchini and cheese out of the oven at the moment when the pasta is ready.
Add a lot of water (2-3 tablespoons) from the pasta to the zucchini with cheese and knead the cheese and mix.

Let's add pasta. You can also add a lot of lemon zest and nuts.

Let's see what's with the meat

Done!
