Yellow courgette, baby plum tomatoes, red onion, yellow and red bell peppers, olive oil, garlic paste, Cypriot Oregano and onion powder, roasted at 280c for an hour, added half of these to some farfalle with a tomato and mascarpone pasta sauce with two cooked Cumberland sausages I'd diced, topped with grated parmesan - the laziest thing I could make, and extra delicious because it's the courgettes @boopbox123 is growing on the allotment!
