I tried the docker image with docker run as well as docker compose. But both seemed less transparent and configurable to me and did not work properly for me. And following the documentation page on installing it without docker is really straightforward. So, I'd prefer that for the time being.

Nope, not really. It is most crucial, though, to follow the right documentation page.
For Debian that would be this one:

All other how-tos I found or documentation bits did not work for me and resulted in faulty installations, lots of error messages and so on.

As AppleTalk seems to be included in the Debian kernel it seems to be a good basis for building an AppleTalk server. Ubuntu does not have it out of the box, AFAIK

@NJRoadfan thanks for the hint. I just found a setting 'Multicast DNS' which was disabled and which I enabled just now. Will try it out later. Maybe instead I will build a second network with an older Netgear switch only for the classic Macs.

Found the post from someone who also had this issue with UniFi switches. They had to disable "IGMP Snooping" in order for AppleTalk traffic to pass the switch properly. Multicast DNS should be enabled regardless, otherwise Bonjour/DNS-SD won't work properly with other devices on your network!

Also, Ubuntu should still have the appletalk kernel module, unless they recently removed it. Its one of the few distros that got it right as they didn't enable the IPDDP support that breaks macipgw. Hopefully that will be a non-issue going forward as the IPDDP module was removed from the kernel a few months back.

As I usually use Ubuntu for any VM and not Debian I just checked another VM running on Ubuntu 22.04.4 LTS

I don't remember that I unchecked AppleTalk support during the Ubuntu install or maybe the lsmod command is not working like this on Ubuntu or it really does not have AppleTalk support (anymore?). Anyhow, I'm happy with my Debian install
